Carrot Cupcakes Recipe

Delicious, your kids will love them.

Ingredients

  • 1 1/2 cups finely grated carrots
  • 1 cup all purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 eggs
  • 1 cup sugar
  • 5 T vegetable oil
  • 1/2 tsp vanilla
  • 1/2 cup raisins/nuts mixed (optional)

Directions

  1. Cream oil and sugar, add eggs and beat well. Mix dry ingredients and mix with egg mixture. Add fruit if you like. Put in paper lines muffin cups.
  2. Bake 325 about 25 minutes.
  3. Ice them if you like, although they are delicious without it.
