Carrot Cupcakes Recipe

Ingredients
- 1 1/2 cups finely grated carrots
- 1 cup all purpose flour
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 eggs
- 1 cup sugar
- 5 T vegetable oil
- 1/2 tsp vanilla
- 1/2 cup raisins/nuts mixed (optional)
Directions
- Cream oil and sugar, add eggs and beat well. Mix dry ingredients and mix with egg mixture. Add fruit if you like. Put in paper lines muffin cups.
- Bake 325 about 25 minutes.
- Ice them if you like, although they are delicious without it.
